Omnia Oven: Trail Mix Baked Oatmeal

This baked oatmeal recipe intrigued me when I discovered it only required one bowl. That’s always a positive while camping or traveling in a camper van!  I made some modifications to the original recipe, to accommodate the Omnia Oven and the ingredients I had on hand.

If you’re not familiar with the Omnia Oven, here’s my spin on it and why it’s one of my favorite pieces of kitchen equipment in our ModVans CV1 Camper Van.

The Omnia Oven is a perfect addition to an RV or camper van that doesn’t come equipped with a stove.  Or it could be used on an outdoor cooking stove with tent camping, too. We love ours and discovered that it’s possible to make just about any recipe you’d make at home in the Omnia Oven.

I have found that recipes calling for a 9×9 pan work best in the Omnia Oven, but you can scale other recipes to fit it.

Trail Mix Baked Oatmeal for Omnia Oven

This is a very adaptable recipe for baked oatmeal. I used trail mix in mine, but you could easily add an equal amount of fresh or frozen fruit. This was a great recipe to use in the Omnia Oven and makes a hearty breakfast option for a day of adventuring!

Ingredients

  • 1 3/4 cup milk
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/4 cup butter, melted and cooled slightly
  • 1/4 cup banana, mashed or applesauce
  • 3 cups old-fashioned rolled oats (not quick oats)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 cups mixture of raisins, Craisins, nuts, coconut, chocolate chips whatever you hand on fine that sounds good in oatmeal will work here--don't overthink it!

Instructions

  1. Cut butter into smaller pieces and put in Omnia Oven (preferably in the silicone liner insert, if you have one). Put the Omnia Oven on the stove burner, with the lid on, over low heat to melt the butter.

  2. Mash banana into the side of the bowl, then add the eggs and whisk. Add the rest of wet ingredients, melted butter, oats and mix-in ingredients.

  3. Add mixture to the Omnia Oven, put on the stove burner, add the oven lid, and cook for 35 minutes. Check it at this point, especially if you'd like the oatmeal to be a little looser, like stovetop oatmeal. Cook for 40 minutes if you like your baked oatmeal to be more solid.

  4. Let sit for 5 minutes, then top with fresh yogurt, fresh fruit, or even whipped cream or more milk. Leftovers will keep refrigerated for up to 1 week.

Notes:

Non-dairy milk is fine

Coconut oil is a great dairy-free alternative to butter

Get creative with mix ins if you don't want to use trail mix ingredients! Fresh berries would work great as would frozen fruit (but don't thaw it first)

 

 

 

Where to Buy an Omnia Oven

The best deal I found on a bundle for the oven and accessories is at Camping World. It includes the oven, baking rack, silicone mold, muffin ring and storage bag.  It amounts to about a $20 savings.

Amazon also offers a bundled kit with a different configuration of accessories. If I had to do it over, I think this kit is more beneficial since it leaves out the storage bag (the oven comes with one anyway, it’s just not as nice) and replaces it with a second silicone mold.

The silicone mold retains odors to some degree, and it would be nice to have two for savory and sweet recipes. You’d have to purchase the muffin liner separately from the bundle, but it works out to be about the same price as the bundle from Camping World.

Tip for Silicone Mold Odors: You can stick the mold in your home oven at 250 degrees Fahrenheit for about 20-30 minutes, and that helps get rid of lingering odors. Just do a sniff test at the 20-minute mark to see if it still has odors. I’ve also read that sticking the mold in a bowl of hot water with a dishwasher capsule also does the trick.

If you’d like to purchase the items separately, Amazon seems to have the most competitive pricing (but it can fluctuate, so it’s probably best to check it against Camping World).  Here’s where I found the best prices on Amazon:
